Xerox 7346 Print B&W as Default?

Does anyone know a way to configure a Xerox 7346 printer to print black and white as a default, but allow the user to print in color on an as needed basis? I am working in a domain and would like to make this change on the server to effect all of my users. Any thoughts?

1. Each user has the printer driver on their computer. Each user sets up their own default printing options. I don't know of any way to make a universal default print to B&W.
