How to trick epson printer to think that the color cartridges are not empty ?

I have Epson all-in-one printer, model RX500. It uses 6 ink cartridges, one black and the others are color. I do not plan to print any photo / color prints anymore. The problem is if one the 6 inks is empty, the printer stop functioning. How do I trick the printer to think the color cartridges are full ?? thanks!!
